On Thursday, the 20th Aug 2015, between 10 am & 12 noon, a workshop for making Khamani was organized by Yogi Mahila Kendra at Bhakti Ashram, Haridham, Sokhada for 25 ladies/women of Dharmabhakti Pradesh of Navsari Zone. Under the guidance of saint sister P. Sadhuramben, the worker sisters of the institution had presented a demonstration for this to the ladies who came from Navsari and its surrounding villages .
Khamani or Khandvi is an item prepared from gram-flour which has a unique relish if taken when hot but, at the same time, it also requires a special skill and practice for making it. First, the hot paste of boiled gram-flour is to be spread and then immediately, the rolls are to be prepared of it and, while boiling it also, the proper proportion of water is also to be maintained otherwise, it becomes difficult to make the rolls if the paste is either more loose or dense. Even while making it in bulk at the time of mass serving, the paste is made with a small quantity of flour every time. Then, when the rolls are ready, they are seasoned/the condiments are used with mustard seeds and neem leaves before serving. All the attendant ladies had got all such important technical information/instructions here from this workshop and even the required flour and the other items were kept ready/made available by the institution for them with the help of/using which, they all got practical knowledge also here only.
Khandavi can’t be prepared in machines. Even for there being good taste in it, no chemicals or leavening it are required and as such, it is considered to be a good and harmless food. Considering all these things, this is that type of a home industry from which, the jobless and those women of middle and poor class families who can’t go out, can also easily earn their livelihood from the sale of it with their skills even by remaining at home and, it doesn’t require even big investment also enabling women to be helpful to their families .
